
Flourish started life as a dream between two bakers Edmund Soliva and Paul O'Connell. Between them they had
worked in many of London's most prestigious hotels and restaurants. While they worked through the early hours of
the morning they always talked about how they could start up a bakery of their own and produce the kind of
breads that they always wanted to. With no business experience they knew that the bakery could not survive
without the help of an expert and with this in mind they enrolled Paul's sister, Helen O'Connell. Helen had
already proved herself in this field by setting up and running several successful food businesses.
In February 2000, Paul discovered a run down bagel bakery inside the former Tottenham Brewery in North London.
He saw the potential and knew he had finally found the right site. Still in their day jobs, every day after work
they went to the bakery to bring it up to scratch. Seven months later, after a series of renovations the bakery
was ready for operation. With just one loyal customer, Tom's Deli, they took the plunge, gave up their jobs and
Flourish Craft Bakery was finally born.
